Ingredients:

  • 50ml Secret Garden Wild Gin
  • 150ml tonic water (preferably from a sustainable brand)
  • Handful of foraged or homegrown herbs (rosemary, thyme, or mint)
  • Dehydrated citrus wheel (from leftover lemon/lime peels)
  • Ice

Method:

  • Fill a glass with ice and add the gin.
  • Pour over the tonic water and gently stir.

Ingredients:

  • 50ml Secret Garden Lemon Verbena Gin
  • 20ml citrus-infused honey syrup (made from honey and leftover citrus peels)
  • 100ml sparkling water
  • Ice
  • Twist of orange or lemon peel

Method:

  • To make the syrup, simmer citrus peels in a mix of equal parts water and honey for 5 minutes, then strain.

  • 10ml dry vermouth
