🌿 What’s the Science Behind the Colour Change?

The secret lies in the natural flower petals we infuse into the gin — specifically dark violet and rose petals from our Distillery Garden in Edinburgh. These petals are rich in natural plant pigments called anthocyanins.

Anthocyanins are pH-sensitive compounds. That means they change colour depending on the acidity of their environment. On their own in the bottle, the gin has a soft pink hue. But when you add an acidic mixer like tonic or lemonade, the pH level drops — and the anthocyanins react by intensifying the pink colour, creating a bright, vibrant transformation.

It’s a beautiful display of nature and science working together — with no artificial colours or tricks required.

Enjoy the beauty. Taste the botanicals. Let nature do the talking.
