Wow, how time really does fly by! We have been here at the Secret Garden for 7 years now and one of the first trees I planted here was the Scots Pine 'Pinus Sylvestris'. This has to be one of my all time favourite trees, not only was it the first trees to start to occupy our lands here once the ice age retreated but it is also medicinal, magical and a very special tree to our ancients.
I absolutely love the smell that the needles give, just gently pull some of a tree and break the needles up and smell them. I have also been known to take some of the resin that you sometimes find on the trees and use it like an aftershave all over my face! Its antiseptic virtues do wonders for you.
An ancient pine wood is also one of my favourite places, where you can lose yourself completely. Their beauty shines as they reach to the skies, especially with a rising or setting sun. What is truly remarkable is they can live up to 700 years. I know a tree that is around that age and there is nowhere better to sit than under its supreme canopy, where old wisdom can shroud you like a veil.
Back to the gin! Honey is another one of my favourites. Our 11 hives and bees are one of our great loves. These two ingredients seem to marry in this gin seamlessly to give a flavour of nature herself.
